Brunch: Eggs Baked Avocado and Strawberry - Kiwi - All-bran Parfait

The weather was quite nice this morning so I wanted to have a brunch outside on our balcony. After 10 days eating well too much during our Honey Moon road trip, we decided to try to eat more healthy again. So the brunch of today is quite healthy and very tasty!! My man does not really like cottage cheese and avocado, but he really enjoyed the brunch I prepared :)

Ingredients for the Eggs Baked Avocado:


1 avocado, cut in half
Chives, minced
1 lime
2 eggs
4 cherry tomatoes, cut in quarter
1/4 yellow pepper, diced
2 pitas
Salt and pepper

Direction:


1. Preheat the oven at 200°C (400°F). Squeeze lime over the avocado and add salt and pepper.

2. Break an egg in each avocado (it's ok if some white goes everywhere! just try to keep the yellow intact and inside the avocado ;)). Place some tomatoes and some pepper on the top (I kept some for presentation). Cook 10 to 12 minutes on the oven (until white are cooked and yellow still running).

3. Place on a plate with chives on the top, and tomatoes and pepper around. Serve with pita bread.

Ingredients for the Strawberry - Kiwi - All-bran Parfait:


4 strawberries, sliced
2 kiwis, sliced
1 cup of cottage cheese
1/4 cup of all-bran flakes

Direction:


1. Slice the fruits. Here is how I layered the Parfait:

cottage cheese
strawberry
cottage cheese
kiwi
strawberry
cottage cheese
all-bran flakes
fruits on the top for decoration

The layers and the quantity of fruits are totally up to you! It will depend of you taste and of the size of the cup or plate you are using.
