I wanted to create new recipes for devil eggs:"deviled eggs with cucumber, mint, cherry tomato, and shallot" and "deviled eggs with grilled pine nuts, lemon, thyme, sun dried tomato, and spinach". I am very happy with the result and I love both recipes... but my favorite is the one with the thyme and sun dried tomato... the taste is so good!!

Ingredients:


3 eggs

"deviled eggs with cucumber, mint, cherry tomato, and shallot" 
3 slices of cucumber
3 leaves of mint
2 cherry tomatoes
1tsp chopped shallot
1tsp olive oil

"deviled eggs with grilled pine nuts, lemon, thyme, sun dried tomato, and spinach"
2 tsp pine nut
1tsp thyme
1 sun dried tomato, chopped
3 spinach leaves, chopped
1tsp lemon juice
1tsp olive oil

Direction:


1. Hard boiled the eggs: put the eggs 10 minutes in boiling water. Remove and place under cold water for one minute. Peel the eggs, cut each eggs in half and collect the egg yolks. Split the egg yolks in two different bowls. Reserve the white on a serving plate.

2. Grilled the pine nuts by placing them on a hot pan with olive oil. Grilled for 1 minutes.

3. Combine all the ingredients of each recipe in the bowls with the egg yolks. Mix and distribute each mixture recipe to 3 egg halves.
