Salmon is my favorite fish <3 I like it in every ways, raw, smoked, and cooked. And it is good for your body! Here I made a really easy recipe: everything roasted at the same time! That was really good. Hope you will like it!

Ingredients:


Salmon fillets (quantity you want, for me it was about 120g per fillet)
Asparagus (quantity you want, for me it was 3-4 per person)
1 peach, cut in 8 pieces
1 nectarine, cut in 8 pieces
1 shallot, thinly diced
3 tsp balsamic vinegar
1 tsp pumpkin seed (or anything, or nothing)
Slat and pepper to taste

Direction:


1. Preheat the oven at 400°C (200°C).

2. Place the shallots and pumpkin seeds on a bowl and add the balsamic vinegar. Let it set while you are preparing the rest of the recipes.

3. On a baking sheet dispose the pieces of peaches and nectarines, as well as the salmon and asparagus. Season with salt and pepper. You can add olive oil if you wish, I did not this time.

4. Baked for 14 min (more or less depending on the size of your salmon and how you like it! I like it still pink inside and my pieces were quite small).

5. Served the salmon with the balsamic vinegar sauce. I presented the salmon on a little salad of arugula, but do whatever you wish and whatever you have home!
