I never saw or ate stuffed artichoke before. I am glad I tried, that was very good. You can adapt the stuffing by adding ground meat for example, or whatever you want!

Ingredients:
2 artichokes
2 potatoes, sliced
2 cup spinach, chopped
2 garlic cloves, chopped
1 onion, chopped
3 tbsp parsley, chopped
3 tbsp parmesan cheese, grated
4 sun dried tomatoes, sliced
1 tbsp olive oil
3 tbsp bread crumb
Salt and pepper, to taste
Direction:
1. Preheat the oven at 400°F (200°C). Cut the stem of the artichokes. Cook the artichokes for 30 minutes in boiling salty water.
2. Heat oil in a pan on low-medium heat. Add garlic, onion, and potatoes. Cook for 20 minutes or until potatoes are cooked, stir often.
3. Once the artichokes are cooked let them cool down. Remove the tiny leaves in the center (see at the end of the post a recipe to use those tiny leaves).
4. Remove the prickly choke with a spoon.
5. Mix parsley, potatoes, parmesan, spinach, bread crumbs, dried tomatoes, and salt and pepper.
6. Stuff the artichokes with the mix.
7. Place the artichokes in a dish and cover. Cook for 30 minutes.
