I always loved eggs en cocotte. It has been such a long time since I did not make them! So here we go :) The nice thing is that you can adapt the recipe with anything you want: salmon, mushrooms, cheese, ham, etc... Enjoy!

Ingredients for one serving:
1tbsp heavy cream
1 or 2 slice(s) of courgette (widthwise), diced
1 or 2 slices of tomato, diced
1 egg
4-5 leaves baby spinach
1 slice of bacon
Direction:
1. Cook the bacon and reserved. Cook the courgette in bacon fat for 2 minutes. Cut bacon in pieces.
2. Place bacon, courgette, tomato in a ramekin. Crack an egg and add cream. Season with salt and pepper.
3. Place the ramekin in a baking dish and poor water in the baking dish until half way the ramekin. Bake for 12 minutes or until white is set.
