Today at lunch I made this omelette. I am not use to cook omelette at all! I use to end up with scramble eggs all of the time. But I have the specialist of omelette at home, so I am learning. I guess today was a success :) I was glad it looked like something. And it was good (it is always nice when food is good looking AND taste good!).

Ingredients:
1/2 onion, chopped
2 garlic gloves, finely minced
1/2 tomato, diced
1/2 zucchini, diced
1/2 yellow pepper, diced
10 black olives
1/2 cup emmental, diced
3 slices of ham, diced
4 eggs
4 table spoon of milk
handful fresh flat parsley
grated Parmesan cheese
Salt and pepper
Cooking oil
5g Butter
Direction:
1. Prepare all the vegetables.
2. Heat oil in a wok or saute pan over medium heat. Add garlic and onion. Cook for 5 min, or until onion soften. Add tomato, zucchini, yellow pepper, olives, emmental, and ham. Cook 10 min, stirring often.
3. Whisk eggs, milk, and parsley together. Season with salt and pepper.
4. Melt butter in a small non-stick frying pan over medium heat. Add egg mixture. Cook until egg is almost set. Add the vegetables and sprinkle over some parmesan cheese.
5. Lift one edge of the omelette with a spatula and fold it over. Cook for another minute, allowing the cheese to melt. Don't overcook it!
6. Transfer omelette into a plate, split in half. Serve with a salad.
