Another recipe with quail eggs! Hope you are not tired of it :) We really enjoyed this Niçoise salad with good tomates, fresh tuna filet, homemade marinated anchovy, and quail eggs.

Ingredients:
110g Tuna filet
5 black olives, sliced
5 anchovies
1 1/2 tsp apple cider (or white wine or red wine) vinegar
5 quail eggs
4 cherry tomatoes, each cut in 4 pieces
50g green beans
75g arugula
10g onion, sliced
1/2 tbsp olive oil
Salt and pepper
Direction:
1. Poor vinegar in a pot of cold water. Gently place the eggs, bring to boil and decrease the temperature to minimum. Simmer for 3 minutes. Place eggs in a bowl of cold water, this will stop the cooking and the it will be much easier to peel them. Peel the eggs and cut them in two pieces.
2. Trim the ends of your beans. This is the boring and long part ;). Blanch the beans in a stock pot of salted boiling water for 3-4 min. Rinse in cold water to stop from cooking. Cut in 3 cm pieces.
3. Cook the tuna on a hot pan for 2 minutes over medium heat. Season with salt and pepper and cook 2 more minutes on the other side. You can cook longer depending on the size of your tuna.
4. Place the arugula on plates, season with salt, pepper, and olive oil. Place tomatoes, anchovies, green beans, tuna that you tear into small pieces, olives, and onions.
