Another omelette! This the complete breakfast I had this morning. Very filling!! and very good :)

Ingredients:
2 eggs
4 thin slices of bacon
20g blue cheese (roquefort in my case)
150g iceberg lettuce
2 cherry tomatoes, cut in 4 pieces
2 black olive, sliced
few slices of cucumber
Direction:
1. Cook the bacon in a small/medium pan (about 20cm/8inch), put the bacon on a plate and leave the fat in the pan, we will cook the omelette in it.
2. Beat the eggs and poor in the pan. Add quickly (the omelette is very thin so it will cook quickly) tomatoes, olives, cucumber, and cheese. Cook for about 3 minutes.
3. Place the omelette on top of the lettuce, add the bacon slices.
