We really liked those coconut flour crepes! Different from regular crepe but very tasty!!

Ingredients:
Ingredients for one crepe (this is a big crepe! I made four of them, so multiply the ingredients depending how many crepes you want to make!):
1/3 cup Milk 2% milkfat
1 egg
1/4 tsp bakig soda
1/4 tp salt
5g butter
20g coconut flour
Direction:
1. Preheat a pan greased with butter (my pan was 28cm/11inch diameter).
2. Beat eggs in a medium bowl until frothy. Add milk and mix.
3. Combine coconut flour, baking soda, salt and mix. Incorporate egg mixture and stir.
4. Poor the mix slowly onto the pan and tilt the pan with circular motions so that the mix spread evenly. Fill any holes with a drop of mix, making sure the pan is fully covered.
5. Cook for 2 minutes, the edges will start to lift (on my pan the middle was cooking too fast...). With a spatula try to make sure that the edges are no more attached to the pan and flip the crepe over. Cook for another 30 seconds. You can serve your crepe with fresh fruits, jam, butter, ... anything!
