I am eating eggs since only recently. Before that I tried to avoid them, thinking they were bad for you. And now I love them!!! Here is another way of cooking them. Hope you will like the recipe!

Ingredients:
2 eggs
1 slice of bacon
6 leafs of spinach, minced
2 tbsp parmesan, gratted
Salt and pepper
Direction:
1. Preheat the oven at 200°C/400°F.
2. Cook the bacon and cut it in little pieces.
3. Collect the egg whites in a bowl (keep the egg yolks!), add a little but of salt and beat the eggs whites into a thick foam.
4. Gently mixed parmesan, bacon, and basil with the egg foam. Form two mounds of the mixture on a baking sheet. Create a pit in the center (this will be to dispose one egg yolk).
5. Bake for 3 minutes.
6. Dispose an egg yolk in each pit and bake for another 3 minutes. Serve with a salad for example!
