One day we had a an overripe banana and I tried to find a low fat recipe that my husband would like. And I found a muffin recipe. I never made muffin before. I know... but I am not a sweet fan! Anyway, I did the muffin, my husband liked them a lot and me too!! Yesterday we had some amazingly good blueberries and some ripe banana. So I prepared those blueberry banana muffin, I hope you will like them!

Ingredients:
1 egg
3/4 cup flour
1/2 tsp salt
1 tsp baking powder
2 tsp sugar
1/3 cup milk
Fresh blueberries, rinsed
1 ripe banana
Direction:
2. Mix the eggs and cottage cheese. Add the banana and stir. Add flour, salt, baking powder, and sugar, stir to combine. Add the blueberries and stir gently.
3. Grease 12 muffin cups and spoon the mixture inside.
4. Cook for 18-20 minutes.
Tips
- Usually I cooked the muffin at a higher temperature and only 15-18min. But as the blueberries produce a lot of liquid, I increased the cooking time and lowered the temperature of the oven. - You can of course use skim milked, fat free cottage cheese, and grease your muffin cups with low fat product!
