I was a bit tired of eating a bowl with cottage cheese topped with fruits, and a sandwich for breakfast... so I decided to try a recipe that includes cottage cheese and flour. I ended up doing those pancakes that I really liked! But if you are not the biggest fan of cottage cheese -or if you are very picky on your pancake- then this recipe may not be for you. Otherwise enjoy it!!!

Ingredients:
1/3 cup whole grain flour
1 cup cottage cheese
1 tbsp melted butter
1/2 tsp vanilla sugar
1 tsp baking powder
1 tbsp of butter to cook
3 eggs, beaten
Direction:
1. Mix all the ingredients (but the butter to cook). Heat a skillet over low-medium heat and coat with butter. Poor some of the mix in the middle. Do not make too big pancake or you will have difficulty to flip them. Wait until you see bubbles at the surface and flip them with a large spatula. Cook on the other side.
Those pancakes are longer to cook than regular ones. Cooking them over low-medium heat for longer time on each side is the key ;)
