After making the little version of scotch eggs with quail eggs i wanted to try the proper version, with big eggs, bread crumbs, and deep frying. That was very good and very filling! Next time I will try a mix of my two recipes of scotch eggs: with regular size eggs but bake in the oven instead of deep fried.

Ingredients:
4 eggs
300g ground meat (I used a mix of pork and beef meat)
handful of parsley, chopped
1 onion, chopped
1 tbsp mustard
150g breadcrumbs
100g plain flour
Salt and pepper
Vegetable oil for deep frying
Direction:
1. Boil the eggs for 10 minutes, cool the eggs place under cold water and peel them.
2. Mix the meat with the parsley, onion, mustard, salt and pepper.
3. Divide into 4 and flatten into ovals.
4. Dredge one egg in flour and place in the middle of the meat oval.
5. Wrap the egg with meat. Repeat for all the eggs.
6. Dip each ball in the beaten egg then in the breadcrumbs.
7. Heat oil and deep fry for about 15 minutes, until the meat is cooked.
