Most of my inspiration to cook come from recipes I find online. But yesterday I wanted to read outside and I took a couple of old healthy recipes books. I came across a pudding recipe and I wanted to try it as I never tried to make a bread pudding (or a pudding) before. I updated the original recipe with the ingredient I had. Hope you will like it!

Ingredients:
400g of "good" bred - bred with things in it (cereals - plain bread - walnut bread - pumpkin seeds bred ...), cut in big dices
300ml of milk
100g of rucola salad, sliced
1 onion, diced
2 garlic (or more, or less), thinly sliced
2 tomatoes, diced
1/2 yellow pepper, diced
1/2 yellow pepper, diced
1 courgette - zucchini, diced
3 eggs
3 white eggs
Salt and pepper

olive oil to cook
Direction:
1. Preheat the oven at 200°C (400°F).
2. Poor the milk on the bread, mix and let aside for 20min.
3. In a pan, sautée the garlic, onion, pepper, and courgette in a little bit of olive oil for 10min, stirring often until onion is cooked.
4. Mix the eggs together.
5. Mix all the ingredients together (I had to do it by hand because my bowl was a bit too small) and place in a greased baking dish and cook in the oven for 40min.

Serve with:
A salad!!! My husband always tell me that I am a rabbit.. I love salad so much ;)
Alternative/Tips/Comments:
The original recipe was with mushrooms and I did not have any... But I had half of a yellow pepper and half of a red one, plus one courgette. So I used that instead. Feel free to use whatever you have in your kitchen! This is a great recipe to finish the leftover.
