This salad is a sort of a Thai salad... but I just used whatever I had in my kitchen! I did not have coriander, so to me it's a bit hard to call it a Thai salad. Anyway. What is important is that it was very good and very easy to prepare! And you can change the ingredients to accommodate your taste :)

Ingredients:


For the marinade:
2 tbsp soy sauce
1 tbsp sesame sauce
1 tsp honey
4 garlic gloves, chopped
1 tbsp ginger, chopped
1 tsp hot pepper flakes
150g pork, diced
salt and pepper

For the salad:

First part:
2 garlic gloves, chopped
10 mint leaves, chopped
1 celery stalk, sliced
1/4 mango, diced
4 cherry tomatoes, sliced
1 tsp sesame oil
1/2 lemon juice
1 tsp hot pepper flakes
salt and papper

Second part:
1/2 tsp sesame seeds
1/2 cup soy sprout
1 cup baby spinach
5-10 mint leaves
optional: mix of seeds for salad

Direction:


1. Combine all the ingredients of the marinade, cover, and let in the fridge at least an hour.

2. Combine all the ingredients of the first part of the salad and let in the fridge.

3. Cook the pork for 10 min on the grill or on a pan over high-medium heat.

4. On a plate place in that order spinach, soy sprout, and the ingredients of the first part of the salad.

5. Top with the pork, sesame seeds, mint, and a mix of seeds for salad.
